The waterfalls are flowing, the grass constantly needs mowing, and the staff here is growing! We welcomed Stanton and Makenzi here recently to assist with, well, everything. She’s wonderful with the guests and the ‘special touches’ around the lodge, cabins, and surrounding grounds. Mr. Stanton has proven very handy with all the grounds and animals, not to mention all the tools and bringing to life the great ideas that we come up with. With all the improvements and additions, there’s always something to do out here.

Many wedding and corporate events have taken place already, with many MANY more in the books. People seem to know about us, with plenty of people relaying stories about this land before we got here, times with their horses and four wheelers or the monster catfish they brought out of the limestone lake.

Yet, I still get voicemails and emails from folks that say something along the lines of “I’ve lived here all my life and just happened to find you on the internet. Things look great, and I can’t believe I never heard of you!”. I am never sure what to say to that. It always comes out as “Thanks” or “Glad to hear that” and before too long, that stranger is a bonafide friend of Meadowlake.

So I ask you to keep searching, keep finding, and keep telling your friends about the great times you had (and will have) out here. We always like telling our story, giving tours, and making friends out of strangers. For 2013, our biggest project so far will be the dozen cascading waterfalls and wandering brook installation in front of the newly built pavilion. We now offer an open-air option for weddings ceremonies and receptions or any large group, with capacities of 200+ seated at tables. Saturday morning dawned pink. So pretty!

I really wanted to serve blueberry muffins but wasn’t sure if that was a good idea or not. I conducted research on twitter and facebook and the feedback was 100% – YES! Serve them!

And so I baked these delicious blueberry muffins.

The hunters loved them. The B&B guests loved them. I was so happy!

The recipe for these gems is below.

I want to thank our hunters and our B&B guests for visiting Meadowlake Ranch. Lala, Shahid, Josh and Allison, it was so great visiting with you. We hope you’ll visit us again!

Blueberry Muffins

1 1/2 cups all purpose flour

3/4 cups sugar

1/2 tsp sal

2 tsp baking powder

1/3 cup vegetable oil

1 egg

1/3 cup milk

1/2 cup sugar

1/3 cup flour

1/4 cup butter cubed

1 1/2 tsp ground cinnamon

Directions

1. Preheat oven to 400 degrees F. Line muffin tin with liners.

2. Combine 1 1/2 cups flour, 3/4 cup sugar, salt and baking powder. Place vegetable oil into a 1 cup measuring cup; add the egg and enough milk to fill the cup. Mix this with flour mixture. Fold in blueberries. Divide batter evenly between 12 muffin cups and sprinkle with crumb topping mixture.

3.  To make crumb topping: Mix together 1/2 cup sugar, 1/3 cup flour, 1/4 cup butter and 1 1/2 tsp cinnamon. Mix with fork and sprinkle over muffins before baking.

4. Bake for 20 to 25 minutes in the preheated oven, or until done.

Madeleine, Kate, Sara and Annalie were a lot of fun to spend time with as we moved through the day.

The day began with a hearty ranch breakfast that included biscuits. The gals were excited as they had wanted to try them while they were in the States. Biscuits in Australia are cookies and what we call biscuits are similar to scones.

After breakfast we headed up at the horse barn where our “dudes” learned basic horsemanship.

Then we headed down for lunch and little relaxation before picking up the afternoon activities. The gals really enjoyed the roping and archery but were a little hesitant with the tomahawks.

After a short hike to the shooting range, the ladies learned gun safety and how to shoot a .22 pistol and rifle. Guns are not common in Australia and the gals marveled at how our laws in America are so different than what they know at home.

It was so much fun to have visitors from Australia. Thank you for visiting us, ladies!

I asked him what he’d like for breakfast the following day and he wasn’t sure. “Do you like pancakes,” I asked him?

Yes!

He likes pancakes so pancakes is what was for breakfast this morning. Daniel ate his pancakes, eggs and bacon like a champ and his dad declared them “darned good pancakes”. We really enjoyed having Stephanie and Rob’s family stay with us and we look forward to seeing them next time.   Darned Good Pancakes Recipe 1 1/4 cups all-purpose flour 2 tbs sugar 2 tsp baking powder 3/4 tsp salt 1 1/3 cup milk 1 egg (we use an egg from our chickens!), slightly beaten 1. In a large bowl, mix flour, sugar, baking powder, and salt. Add milk and egg and stir just until flour is moistened. 2. Head griddle or skillet over medium heat until a drop of water sizzles. (We use an electric griddle set to 350F). Pour batter by 1/3 cupfuls onto hot griddle making a few pancakes at a time; cook until undersides are golden. Place on warm platter; keep warm. 3. Repeat until all batter is used. Serve with butter, maple syrup or other toppings as desired.

The Benjamin’s joined us for a pheasant hunt. Looks like a success!

We then gave a ranch tour to a bride who is planning her wedding for April of 2014! She’s on the ball and she and her fiance’ love the ranch.

After that the great folks from EQ Oklahoma joined us for their company Christmas party. By the time the party started, the day had turned windy but an absolutely gorgeous 75 degrees.

The EQ bunch is a competitive group. They fired for points on our shooting range. After they had their lunch, we showed them how to rope and do archery. But it was the tomahawks that really got the competition up!

Everyone had a good time!

The beautiful and fun day ended with a most spectacular sunset. This is how the first day of December should always be.

This breakfast will include a baked goodie, fruit, juice, coffee and tea.

The baked good for tonight’s guests are Applesauce Muffins. They smell delicious. Like fall! And they taste even better.

Here’s our recipe if you’d like to make it yourself.

Applesauce Muffins

1 cup butter, softened

1 cup sugar

1 egg (we use the eggs from our chickens!)

1 cup applesauce

2 cups all-purpose flour

1/2 tsp baking soda

1 /2 tsp cinnamon

1/2 tsp ground allspice

pinch of cloves

Instructions

In a bowl, cream butter and sugar. Add eggs and vanilla; mix well.

Stir in applesauce. Combine the flour, baking soda and spices; stir into creamed mixture.

Fill greased or lined muffin cups 3/4 full. Bake at 350 degrees F for 20-25 minutes or until a toothpick comes out clean.

Cool for 5 minutes before removing from pan to wire rack.

Yield: Approximately 1 dozen

Don’t worry if you want to enjoy a hearty, hot breakfast in the Lodge. It’s still available.

The class will be conducted by Daniel Bradley, Sand Springs Chief of Police and is the first step towards obtaining an Oklahoma Conceal Carry Permit.

Chief Bradley has been a Certified Oklahoma Self Defense Act Instructor for Conceal/Open Carry since the initiation of the act and holds many other instructor certifications.

Each student must bring:

• Photo ID
• A semi-automatic hand gun
• A minimum of 50 rounds
• $75 class fee

Eye and ear protection will be provided as well as refreshments. The class will begin at 1:00 p.m.

Students must be 21 to participate and the class size is limited to 20 students.
